Scorfano Rosso

Along the coasts of the Tyrrhenian Sea, in Maremma, thanks to the presence of rich coastal lagoons and sources of salty and warm water, the Ancient Romans raised the caught fish. “Scorfano Rosso” is a Maremma red wine, suitable for fish, with low alcohol content and barely perceptible tannin. The name (Redfish) is dedicated to a type of particularly tasty and succulent fish that requires the combination with a more full-bodied wine rather than the classic white wines. The Sangiovese is harvested early and vinified with a very brief maceration on the skins in order to extract gentle tannins and limited alcohol content. Subsequently it is refreshed on the skins of Alicante (grapes with a high coloring potential) where it acquires perfumes and roundness. A wine that, due to its low alcohol content, is also suitable for quick consumption, for lunch at noon or combined with non-binding dishes (pizza, cutting boards). To be consumed at room temperature or slightly cool.
Grape varieties: Sangiovese and Alicante
Wine making and aging: short maceration of Sangiovese, then refreshed on Alicante skins.
Tasting notes: ruby color, complex aromas of berries, floral notes. Fresh at the first impact and then soft and round. Barely perceptible tannin. The body is pleaseantly light. Easy drinking wine.
Food pairings: fish dishes, especially cooked with tomato sauce, tasty fish dishes with spicy notes but also for pasta with meat sauce, pizza, cold cuts, soups and for an every day use.
